One-pan Leafy Greens Chicken

Try these super juicy one-pan chicken legs step-by-step recipe; they’re slowly grilled in olive oil, with garlic and thyme. A simple delicious recipe for tender and juicy chicken legs grill-roasted to create a delicately crispy skin. Flavourfully enhanced with tangy tomatoes, lime, onions and earthy leafy greens. And it’s a wonderfully cosy dinner for the whole family to enjoy.

Ingredients

for 6 servings

  • 6 bone-in chicken legs 
  • 1 tablespoon olive oil 
  • 1 teaspoon dried thyme
  • 1 teaspoon Foodace grill mix
  • 1 onion, diced 
  • 4 cloves garlic, minced 
  • ½ teaspoon salt 
  • ¼ teaspoon pepper 
  • ½ teaspoon ginger powder 
  • ½ teaspoon paprika 
  • ½ teaspoon dried basil 
  • ½ teaspoon dried oregano 
  • ½ leeks, sliced 
  • ½ cup fresh cilantro, chopped 
  • 2 lime, halved
  • 1 fresh tomato, diced
  • 1 celery, chopped 
  • 1 green bell pepper, diced 
  • Salt, to taste 
  • Pepper, to taste

Method

  1. Preheat oven to 200˚C.
  2. In a large bowl, season the chicken with Foodace grill mix, salt, pepper, garlic powder, paprika, dried basil, thyme and dried oregano. Mix until thoroughly coated with the seasoning.
  3. Heat olive oil in a grill cooking pan and place chicken legs in the hot oil. Cook for about 3-4 minutes or until the thighs develop brown crispy skin, and flip over. Cook for extra 2-3 minutes to brown the other side, and remove from the pot.
  4. Add garlic, stir until fragrant, then add some thyme, and oregano, and stir. Reduce heat to low.
  5. Add all the vegetables, and mix together.
  6. Return chicken to the skillet. Mix until thoroughly coated in the sauce.
  7. Add lime wedges to skillet.
  8. Bake/grill for 30 minutes or until chicken is cooked through.
  9. Enjoy!
